

Aged teas are most often recognized by the name of Pu-erh tea that comes from the Yunnan Province of China. These are exceptional large-leaf teas that are finished through a long fermentation–or cooked process that varies from several weeks to decades. Like wine, the more aged Pu-erh teas can fetch handsome prices by collectors. There are black and green and raw Pu-erh teas.
In ancient times the Pu-erh tea was most easily transported along the Silk Trade Route when it was compressed into brick and round cake shapes. Today the many different shapes make purchasing Pu-erh teas as enjoyable as drinking it.
When I had my first cup of Pu-erh I immediately felt that I transported myself from my dining room table far across the world. It was a very meditative experience and to this day I get the same feeling as I inhale the aroma before sipping. What I also enjoy is allowing the piece of Pu-erh to stay loose at the bottom of my cup so that all I have to do for many more cups, is add more hot water.
Pu-erh steeps best in very hot 212°F for 2-3 minutes.
